A classic southern recipe with a wee bit of a twist... onion powder and or garlic powder. Delicious with fish, fresh greens of any kind, barbecue, ham and beans, soups and stews, or, one can just slather with unsalted butter and/or honey and BOOM! Enjoy!
Yield: 6 single pattiesvegetable oil | |
1 cup | yellow self-rising cornmeal mix |
3/4 | teaspoon onion powder, optional |
1/4 teaspoon | garlic powder, optional |
1/4 teaspoon | salt |
1/2 teaspoon | ground black pepper |
3/4 cup | boiling water |
1. In 9" cast iron pan, pour in oil until 1/2" full. Heat over low to medium heat until oil sizzles. Avoid smoking hot.
2. In large bowl, combine cornmeal, onion powder, salt, and ground black pepper. Slowly add boiling water. Stir until evenly combined and smooth.
3. Scoop 3 tablespoons of batter. Mold with hands into 1" thick patty. Repeat until all batter has been formed into patties.
4. Place in hot oil. Cook 3 minutes until light golden brown. Flip over. Cook 3 minutes longer. Batter cooks very quickly. Pay close attention to prevent burning.
5. Drain on paper towels.
6. Serve hot.
