English Tea Cake

These wonderful little cakes are perfect for high tea. A muffin tin works fine if you don't have a gem pan handy. Gems are a Victorian style cake that were very popular.



Ingredients:

1/2 pound unsalted butter
1/2 pound white sugar
3/4 pound all purpose flour
1/4 pound currants
6 large eggs
1 teaspoon baking powder

Directions:

Cream butter and sugar until light. Sift together the flour and baking powder in a separate bowl. Add the eggs to the butter and sugar mixture one at a time beating well between additions, scrape bowl as needed. Add the flour and incorporate fully. Add the currants (after they have soaked in water) and bake in a pre heated gem pan for 20 to 25 minutes.
