from the kitchen of: Diane Richardson A dressing of mint-infused sugar brings out the flavors of each fruit in this slightly sweetened fruit salad. This truly unique salad could easily become a family favorite!
| 2 cups halved grapes |
| 1 cup hulled and sliced strawberries |
| 1 cup diced fresh pineapple |
| 2 cups diced honeydew melons |
| 1 cup diced cantaloupe |
| 1 cup diced fresh grapefruit |
| 1 cup blueberries |
| 2 cups diced oranges |
| 2 tablespoons sugar |
| 1/4 cup minced fresh mint leaves |
Combine all ingredients, except mint and sugar, in a large bowl. In mortar and pestle, grind minced mint and sugar together until well blended. Add minted sugar to fruit and lightly mix. Cover and chill salad at least 3 hours or overnight. Garnish with extra mint leaves if desired.
