Three Bean Salad
Serves 6
Ingredients:
1 can black beans1 can garbanzo beans
1 can red kidney beans
1/2 cup chopped cucumber
1/2 cup chopped red bell pepper
1/4 cup chopped onion
2 tablespoons parsley
1/3 cup red wine vinegar
1/4 cup olive oil
1/2 teaspoon salt
1/2 teaspoon garlic powder
1 teaspoon sugar
Drain and rinse beans. In a large bowl combine the beans, cucumber, red pepper and onion. In a small bowl, whisk parsley, vinegar, oil and seasoning. Pour over bean mixture and toss to coat. Cover and refrigerate until ready to serve. Serve over lettuce.
