Southern Hash Browns

Serves 6

Ingredients:

4 tablespoons butter
4 cups diced potatoes
4 slices bacon, crumbled
1/2 cup chopped onion
1/2 cup green bell pepper
salt and pepper

Melt butter in skillet. Add potatoes, bacon, onion, green pepper, salt and pepper to taste. Cook, covered, over low heat until bottom is golden brown. Turn over and continue cooking until other side is browned and potatoes are tender.
