Double the chicken breasts and marinade. Grill all the chicken. Refrigerate half of the cooked chicken and save for Day 4 sandwiches. Wrap in foil and reheat in the oven at 350° for 20-30 minutes or slice the chicken and serve cold on bun.
Grate Parmesan cheese for the week, about 3 oz. (Day 1, Day 3, Day 5)
Prepare onions for the week: Day 1 chop one onion for the black beans, slice one small red onion. Use half in the Day 3 salad, and the other half in the Day 4 salad. Dice two medium red onions for Day 5 stew.
