Mashed Cauliflower with Parmesan

My family loves this tasty side dish made from cauliflower and freshly grated parmesan. We mix it up by adding sauteeing minced garlic in a little butter and adding when mashing.

Ingredients:

1 large head cauliflower (about 2-1/2 pounds), broken into florets
1 cup freshly shredded Parmesan cheese, divided
1/3 cup heavy whipping cream or half-and-half cream
1 tablespoon butter
1/2 teaspoon pepper
minced fresh parsley, optional

Directions:

Place 1 in. of water and cauliflower in a large saucepan; bring to a boil. Cook, covered, 10-12 minutes or until soft. Drain.

Mash cauliflower to desired consistency. Stir in 1/2 cup cheese, cream, butter and pepper. Sprinkle with remaining cheese and, if desired, parsley. Yield: 6 servings.
