Irish Tangy Lemon Curd

Delicious served over pound cake.

Ingredients:

4 lemons
5 eggs
9 ounces unsalted butter
2 cups sugar

Directions:

1 Extract lemon juice.
2 Grate rind thinly.
3 Beat eggs. Stir eggs, lemon rind, lemon juice, butter and Sugar atop a double boiler.
4 Stir over simmering water until mixture is glossy and thick.
5 Strain into jars and cover.
6 Store in a fridge.
