Egg Salad

Serves: 4

My perfect egg salad takes some effort to make a smooth paste out of yolks / mayo / mustard. Interesting additions are dill relish, capers, olives, bacon, and radishes amongst others. It can also be made with curry powder.



Ingredients:

8 eggs hard boiled and cooled
1/2 cup mayonnaise
1 1/2 teaspoon yellow mustard
2 tablespoons sweet white onion finely diced
3 tablespoons celery finely diced
1/4 teaspoon salt
pepper to taste
2 teaspoons lemon juice
2 teaspoons fresh dill chopped
dill relish (optional)
chives garnish

Directions:

Cut eggs in half. Remove yolks and chop whites.
Mash yolks with mayonnaise, mustard and salt & pepper to taste until smooth and creamy. SMOOTH is important to my taste.
Add remaining ingredients and stir well.
Serve on bread or over lettuce.
