1 6 ounces package baby spinach leaves chopped |
2 tablespoons butter |
1/2 small onion finely chopped |
1 clove garlic minced |
1/4 cup milk |
8 large eggs |
1/4 cup shredded mozzarella cheese |
1/4 cup shredded Parmesan cheese |
1 teaspoon fresh thyme finely chopped |
1 teaspoon fresh basil finely chopped |
Salt and pepper to taste |
Heat the butter in a large non-stick skillet over medium heat until melted. Add the onion and garlic and saute until tender.
Add the spinach, thyme, and basil. Cook until the spinach has wilted.
Whisk together the eggs and milk in a small bowl until foamy, then pour the egg mixture into the pan.
