This is how we do it down here in Texas!

| 6 catfish filets |
| 1-1/2 cups cornmeal |
| 1 cup flour |
| 1 teaspoon cayenne pepper |
| 1 teaspoon black pepper |
| 1 teaspoon salt |
| 1 cup buttermilk |
| peanut oil for cooking |

Combine first 5 ingredients in a large shallow dish.
Dip each catfish in buttermilk, allowing excess to drip off, dredge in cornmeal mixture.
Pour oil to depth of 2 inches into a skillet or Dutch oven...Heat oil to 375 degrees over medium high heat. Increase heat to high immediately add 2 catfish adjust heat as needed to maintain 375 degree oil.
Fry catfish - 4 minutes on each side or until fish flakes easily when tested with a fork.
Drain on paper towels. Remove large bits of crust from oil with a slotted spoon, if necessary, and immediately repeat frying procedure with remaining fish.
