A rich and spicy steamed pudding.
1 cup | shredded potato |
1 cup | shredded carrot |
1 cup | shredded apple Granny Smith |
1 1/8 cups | all purpose King Arthur |
1 cup | brown sugar packed |
1 cup | raisins soaked |
1/2 cup | butter room temperature |
1 teaspoon | cinnamon |
1/2 teaspoon | ground cloves |
1/4 teaspoon | lemon oil |
1 teaspoon | baking soda |
Combine and cream the room temperature butter and brown sugar. Into another bowl shred 1 cup each of potatoes, carrots, Granny Smith apples. Sift together 1 1/8 cups of all purpose flour and the baking soda and set aside. Add the vegetable and apple mixture to the creamed butter and sugar and mix well. Incorporate the spices and lemon oil. Add and stir in the flour and baking soda followed by the raisins. Pour the mixture into a greased pudding pan and place the pan into a larger pot with a trivet in the bottom and 1 inch of water. Steam the pudding for three hours. Add water as needed to keep the pot from boiling dry.
