Chocolate Caramel Cookies

Ingredients:
1 cup butter, softened
1 cup sugar
1 cup brown sugar
2 eggs
2 teaspoons mexican vanilla extract
2 1/4 cups flour
1 teaspoon baking soda
3/4 cup unsweetened cocoa
1/2 cup walnuts chopped, optional
1/2 cup sugar (to roll cookies in for coating)
48 Hershey Rolo chocolate caramels


Directions:
Beat butter until creamy. Gradually beat in sugars, eggs, vanilla. Add dry ingredients, cover, and chill for 1 hour. Mix nuts with sugar. Press dough around one piece of Rolo candy. Roll into a ball. Dip the top in sugar and place sugar side up on cookie sheet. Bake at 375° F for 8 minutes.
