This is an old, old Amish recipe for homemade ham salad from an Amish woman in Indiana. A lot of Amish recipes for ham salad, believe it or not, are "mock ham salad" recipes using ground-up hot dogs. This is an old recipe that actually uses ham. Â
1 1/2 cups ham, cooked and ground |
6 hard-cooked eggs, cut-fine |
1/2 cup celery, diced fine |
1/2 cup pickle relish |
1/3 cup mayonnaise |
2 tablespoons prepared mustard |
1 tablespoon lemon juice |
Combine ham, eggs, celery. Blend in mayonnaise, relish, mustard, and lemon juice. Add to the ham mixture. Toss lightly.
Season to taste with salt and pepper. Chill.
