Mennonite Fellowship Lazy Morning Pie

I got this recipe from a dear friend who was Mennonite. She introduced me to their wonderful home style cooking. Her wedding dinner, which I attended, was an old fashioned farm picnic complete with big platters of home fried chicken and corn on the cob. Instead of a wedding cake they served pies of all sorts. This is one of the pie recipes she gave me from her wedding dinner. Its easy and very good. I like it best made with peaches or pineapple, but any canned fruit will work. USE REGULAR CANNED FRUIT, not pie filling. Home canned or store bought canned are both fine.

Ingredients

1/2 cup butter
1 cup sugar
1 cup all purpose flour
2 tsps baking powder
1/2 tsp salt
3/4 cup milk
4 cups canned peaches or crushed pineapple in own juice (do not drain), use home canned or store bought canned fruit, not pie filling

Directions

Preheat oven to 350 degrees. Melt butter in a 9 by 13 inch pan. Set aside briefly. Sift together all dry ingredients. Mix dry ingredients with milk in a small bowl. Pour into prepared pan, but do NOT stir. Pour 4 cups of fruit with juices into pan over batter. Do NOT mix or stir. Bake at 350 degrees for 1 hour. Serve with ice cream or whipped cream.

NOTE: You may optionally add 1 teaspoon cinnamon to the dry ingredients, with some fruits, if you choose. This is especially good with apples, blueberries, or peaches. USE REGULAR CANNED FRUIT, NOT PIE FILLING
