The origin of this recipe is lost in obscurity. Torn from a magazine many years ago, then copied and recopied over the years, it has now been a family favorite for two generations. The name comes from the fact that the recipe once suggested baking it in a coffee can much as a hobo might have done. Gives it character, but I always baked mine in a loaf pan!
1 1/2 cups | raisins |
2 teaspoons | baking soda |
1 cup | boiling water |
1 cup | sugar |
3 tablespoons | butter |
1 | egg |
1/4 teaspoon | salt |
2 cups | flour |
1/2 cup | chopped walnuts |
Measure raisins into mixing bowl. Sprinkle on baking soda, then pour boiling water over raisins. Let cool.
Meanwhile, cream together sugar and butter, then beat in egg and salt. Add raisen mixture to this and mix together. Then add flour and mix well Stir in walnuts.
Turn batter into a standard 9 x 5 loaf pan which has been well greased.
Bake at 350 degrees for one hour or until knife inserted in middle comes out clean. Let cool slightly, but remoe from pan while still quite warm for easy removal. Leave on cooling rack until completely cool, then store in zip lock bag. Freezes well, so make some extra loaves!
