That Evasive Meatloaf
I purchased and loaded “Cook’n with Betty Crocker Deluxe”, but I cannot find a meatloaf recipe. If it isn’t there, how do I purchase meatloaf recipe software from your site?

Hi Bill,
I'm sorry there wasn't a meatloaf recipe on your software. Sometimes the classic recipes just don't make it into the new cookbooks, unfortunately. However, you can download two recipes from our website (I've posted the links and recipes below).

Wagon Wheel Meatloaf
1 1/2 pounds ground beef
1 large onion, diced
1 egg
1/2 cup bread crumbs
1 teaspoon salt
Dash pepper
2 stalks celery, diced
1/2 green pepper, diced
2 tablespoons butter
1 1/2 cups mashed or instant potatoes (made)
3/4 cup Velveeta cheese, diced
1 cup barbecue sauce
Mix ground beef, egg, 1/2 onion and bread crumbs together. Roll the meat out in between two pieces of freezer wrap or wax paper. Sautee green peppers, 1/2 onion, and celery in the butter. Spread the sautéed vegetables on top of the rolled out meat. Layer the mashed potatoes on top of the vegetables then place the diced cheese cubes on top of the mashed potatoes. Roll the meat into a loaf and pinch the ends together. Place in a casserole dish, seam down. Top with barbecue sauce and bake at 350 for 45 min to 1 hour.
Glazed Meatloaf
1/2 cup ketchup
1/3 cup brown sugar
1/4 cup lemon juice, divided
1 teaspoon mustard powder
2 pounds ground beef
3 slices bread, broken up into small pieces
1/4 cup chopped onion
1/4 cup chopped onion
1 teaspoon beef bouillon granules
Preheat oven to 350 degrees F (175 degrees C).
In a small bowl, combine the ketchup, brown sugar, 1 tablespoon lemon juice and mustard powder. In a separate large bowl, combine the ground beef, bread, onion, egg, bouillon, remaining lemon juice and 1/3 of the ketchup mixture from the small bowl. Mix this well and place in a 5x9 inch loaf pan.
Bake for 1 hour, drain any excess fat, coat with remaining ketchup mixture and bake for 10 more minutes.
