Grill an extra 1 1/2 pounds of shrimp while you are grilling the Pesto Shrimp Skewers. When done and cool, chop into bite-sized pieces and save to use in Zesty Lime Shrimp and Avocado Salad on Day 4. You can add the pesto marinate or not, but I like the extra amazing taste of the pesto in this salad.
Grate an extra cup of zucchini and store in a zip bag to use in Chocolate Zucchini Cookies on Day 3.
Grill 2 extra ears of corn and cut off the cob. Save to use in the Nectarine Salad on Day 5.
When preparing the watermelon for Watermelon Sherbet, make the watermelon puree and simple syrup for Day 5, Watermelon Margaritas. Refrigerate and it will be cold when you need it.
