Double the bacon. Crumble the extra and save for Bubble and Squeak on Day 4.
Double or triple the mashed potato recipe. Save 2 cups to use on Day 4, Czech Potato Dumplings and any other leftover to use in the Bubble and Squeak.
Save any leftover peas to use in Bubble and Squeak on Day 4.
Save any leftover roasted vegetables to use in Bubble and Squeak on Day 4.
For the Bubble and Squeak, when using leftover mashed potatoes, if you have salted them, leave out the 1-teaspoon of salt in the recipe. Adjust the amount of salt as needed in the recipe.
Use up the leftover vegetables from the week: mashed potatoes, mushy peas, roasted vegetables, and the crumbled bacon prepared on Day 1, in the Bubble and Squeak.
