Save, or plan to cook extra, leftover pork tenderloin to use for Meal 3, Spicy Thai Pork Tenderloin Salad. You will need 1-1 ½ pounds extra.
Prepare an extra head of cauliflower and process as below. Save to make Creamy Mashed Cauliflower for Meal 2.
For the Garlic Mashed Cauliflower, you already prepared the cauliflower for Meal 1. Because it is processed, you will only need to steam it for 5-7 minutes.
When making the Chopped Salad, make enough extra salad, omitting the avocados, gorgonzola cheese, pistachio nuts, and raisins. Save to use in Meal 3, Spicy Thai Pork Tenderloin Salad.
When making the salad, omit the pork tenderloin and marinade. For my quick meal, I use an oriental dressing, like Annie's Natural Organic Asian Sesame Dressing. The marinade is very good, so feel free to throw together this marinade (1/2 the recipe) to use as your dressing for the salad.
Use the salad mix you prepared for Meal 2, Shades of Green Chopped Salad. Add sliced cabbage. Top with the dressing, making this a completely different salad from yesterday.
