Being almost “empty nesters”, my spouse and I are usually alone for dinner meals. I must say it is tempting to forego the fuss, and just open a can of soup--especially after a long day at work.
However, wanting to keep some company around for several more decades, I have had to come up with recipes that are quick, easy, and healthy for both of us.
Below is one of our favorites. It takes little time, is nutritious, and I can double the recipe and use it later in the week. Just add a big green salad with lots of your favorite fresh vegetables, light a couple of candles, and savor the moment.
Minestrone - (serves 2)
- 2 cups chicken broth
- 1 small zucchini, sliced
- 1 cup frozen mixed vegetables
- 1 tomato, peeled and chopped
- 2 tablespoons chopped onion
- 1 clove garlic, chopped
- 1/3 cup uncooked macaroni
- 1 (8 3/4 ounce) can kidney beans, drained
- 1/4 teaspoon oregano
- 1/4 teaspoon basil
- Parmesan cheese, grated (sprinkle to taste)
Bring broth to a boil in a saucepan. Add remaining ingredients except cheese. Reduce heat and simmer 15 minutes. Sprinkle with cheese and serve.
Don't forget to include a fresh baked loaf of french bread or a delicious chewy baguette!
