Carrot Salad with Lemon Dressing

Serves 8

Ingredients:

1 cup raisins golden
3 tablespoons water
4 cups carrots shredded
1/2 cup celery sliced
Lemon Dressing (see below)

Lemon Dressing:
3/4 cup vegetable oil
1/4 cup lemon juice fresh
1 teaspoon salt or to taste
1 teaspoon paprika
1/2 teaspoon dry mustard
dash cayenne pepper

In a blender container, blend together oil, lemon juice, salt, paprika, mustard and cayenne. In a small covered saucepan, place raisins and water. Bring to a boil, remove from heat and let stand 15 minutes to absorb water drain. Toss raisins, carrots and celery into salad bowl. Stir in dressing and refrigerate overnight.
