This is a splurge recipe for Valentines Day! (although it works for any special occasion) This recipe is an excellent, simple way to show somebody that you care! The steak will go well with the compound butter from the salmon recipe (meal 3), if you'd like to make it earlier in the week. If you don't feel like spending the money on a tenderloin roast, ask your local butcher to cut you a delmonico roast. While not as tender or nearly as flavorful, it will save you some money while still working in this recipe.
For maximum time efficiency, do all of your prepwork first by cutting your vegetables and then your raw meat (to save time sanitizing your knife and cutting board); then start cooking at the same time!
Be careful not to overcook the salmon. The butter acts as a sauce and will melt into the fish helping it stay moist and add more flavor!
If you don't have time to make one of the other meals this week, make an extra large batch of this. It reheats the best of this week's meals and can also be breaded and fried for a quick appetizer!
Salad greens
If you have extra time, use the pesto recipe from November recipes to mix into your chicken. If you have a busier week, you can use a premade pesto sauce from the store. Some stores even carry a premixed pesto mayonnaise! (I recommend the fresh made for the best flavors!)
