Sautéed Potatoes

2 wholes russet new potatoes peeled, sliced 1/4 inch
1 onion julienned
1/4 cup butter
1 clove garlic
2 teaspoons fresh parsley minced
kosher salt
fresh ground black pepper
Directions:
Melt butter in a cast iron skillet over medium heat. Add potatoes and onions and cover. When the potatoes are nearly cooked through, add garlic and parsley and season with salt and pepper.
