Prepare 2 extra chicken breasts, if you don't think you will have leftovers. Chop the 2 cooked chicken breasts into bite size pieces and use on Day 4, Cheesy Pesto Chicken Spaghetti Squash. If you don't want the spicyness in the Pesto Chicken, salt and pepper the 2 extra breasts and cook them alongside the Thai Chicken, then chop and save for Day 4.
