When cooking the rice for today’s meal, put on another pot of plain rice to cook. You will need 3 cups, so 1 ½ cup of dry rice. This rice will be stored and used for Meal 4, Pineapple Ham and Swiss Casserole.
Make the lemon curd filling for the lemon coconut cake for Meal 2. It will have time to set up in the refrigerator.
Cube 2 cups of the leftover ham to use in the Pineapple Ham Swiss Casserole, Meal 4.
Save 4 thin slices of the ham to use for sandwiches for Meal 5.
