When chopping the carrots, peel and cut an extra 2 pounds of carrots into 1/4-inch diagonal slices to use for Meal 5, Chili-Roasted Carrots.

Instead of buying broccoli for Meal 4, purchase an extra bunch of brocollini. Wash and dry, then chop it coarsely and store to use in the Garlic Oil Sauteed Pasta with Broccoli.

Instead of the broccoli, substitute brocollini from Meal 2.

When cutting up the pineapple for the salsa, crush the remaining pineapple with a fork and save to make the Pineapple Coconut Ice Cream for Meal 5. Be sure to save the juice with it. You will need 2 tablespoons of the juice.




DoveTailing Tips

Use the crushed pineapple from Meal 5 to make the ice cream for today’s meal. The ice cream takes about 4 hours, so plan accordingly.
