Super Simple Mango Chutney

So much faster than the original recipe, but just as good. Serve with Indian Food, Spanish rice, or top white or brown rice.

Ingredients:

3 cups diced mangos
1/2 cup finely diced red onion
1/3 cup golden raisins
1/3 cup brown sugar
5 tablespoons finely minced garlic
3 tablespoons finely minced ginger root
3 tablespoons white wine vinegar
1/4 teaspoon salt
1/8 teaspoon red pepper flakes

Directions:

Combine all of the ingredients in a medium saucepan. Set over medium-low heat and cook, covered, for 30 minutes. Store in a sealed container.
