4 mangos, peeled, seeded, and cubed
1 cup simple syrup (1/2 cup water, 1/2 cup sugar boiled until sugar dissolves)
3 tablespoons fresh lime juice
Puree cubed mango in a food processor. Pour in simple syrup and limejuice, and puree until smooth. Transfer in a metal bowl and place in the freezer until slightly firm (not frozen).
Process mixture again in a food processor until smooth. Transfer to freezer container and freeze for 2 hours or until firm. Garnish with peels of lime zest.
