Ginger and White Chocolate Holiday Pancake Gift

This is one of the best pancake mixes I have found. It has a nice holiday flavor and makes a perfect gift. Our family loves these pancakes! The only suggestion I have to make these pancakes prettier. When cooking the pancakes sprinkle the white chocolate chips individually on the pancake after they have started to form bubbles.
- 1 (1-quart) wide-mouth jar
- 1 cup cake flour
- 1 cup all-purpose flour
- 1/2 cup buttermilk powder (or plain dry milk)
- 1/3 cup + 1 tablespoon sugar
- 1 tablespoon baking powder
- 1 1/2 teaspoons ground ginger
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/8 teaspoon ground cloves
- 1 cup white chocolate chips
In a large bowl, combine all ingredients except chocolate chips. Mix thoroughly. Pour mix into quart jar; tamp down to make room for chocolate chips. Finish jar by topping mix with the 1 cup of chocolate chips. Seal jar. Make copy of pancake recipe (shown) and attach it to your gift jar.

1/3 cup butter, softened
2 large eggs
