'Manly' Side Dishes

Have you been asked to bring a dish to the infamous family Father’s Day get-together? Tired of making the same boring side-dish you habitually bring to every family gathering? Surprise everyone with one of these deliciously unique and “manly” side-dishes. They are guaranteed to be a new crowd-pleaser.
Bacon-wrapped Cocktail Sausages
1 (14-ounce) package Lit'l Smokies
1 (12-ounce) package lean bacon
3/4 cup brown sugar
Directions:
Preheat your oven to 325 and line a baking sheet with aluminum foil. Using a pair of kitchen shears, cut the slab of bacon into thirds.
Wrap 1/3 of each slice of bacon around each sausage and secure with a toothpick and place on the baking sheet.
Repeat with remaining sausages and bacon. Sprinkle brown sugar over sausages and bake at 325 for 40-45 minutes or until bacon has cooked and is starting to brown.

Loaded Baked Potato Skins
4 large baking potatoes, baked
3 tablespoons olive oil
1 tablespoon grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon paprika
1/8 teaspoon pepper
8 strips bacon, cooked and crumbled
1/2 cup shredded Cheddar cheese
1/2 cup sour cream
4 green onions, sliced
Directions:
Cut potatoes in half lengthwise; scoop out pulp, leaving a 1/4-in. shell (save pulp for another use- or add butter, milk, and seasonings, mash it up, and serve as mashed potatoes).
Place potatoes skins on a greased baking sheet.
Combine oil, Parmesan cheese, salt, garlic powder, paprika and pepper; brush over both sides of skins.
Bake at 475 degrees for 7 minutes; turn over. Bake until crisp, about 7 minutes more.
Sprinkle bacon and cheddar cheese inside skins. Bake 2 minutes longer or until the cheese is melted. Top with sour cream and onions.
Serve immediately.

Cowboy Caviar
Ingredients:
1 can black beans, drained and rinsed
1 can sweet white corn, drained and rinsed
2 to 3 roma tomatoes, diced
2 extra large avocados (or 3 regular), diced
1/2 bunch cilantro, finely chopped
1/8 cup lime juice, more to taste
salt to taste
Directions:
Toss everything together in a large bowl, do not over-mix. Serve with tortilla chips.
