Marinated Cucumbers
The first summer I grew my own garden, our cucumbers did especially well. We had so many and I had to figure out ways to use them. One night, we were invited to dinner at a friend's house. I asked if I could bring something and they said a salad. Since I had an abundance of cucumbers, I made a cucumber salad. Everyone really enjoyed it. I have since changed my recipe a bit and now call it "Marinated Cucumbers." Enjoy!

Ingredients:
2-3 | medium cucumber thinly sliced |
1/3 cup | rice vinegar |
1/3 cup | water |
2 tablespoons | sugar |
1/2 teaspoon | salt |
1/8 teaspoon | pepper |
1/2 teaspoon | dried dill weed |
Directions:
Place cucumbers in a large gallon-size ziplock bag or large tupperware container. Mix the remaining ingredients in another bowl. Pour the mixed ingredients onto the cucumbers. Seal the cucumbers and refrigerate at least 3 hours. When the cucumbers are done marinating, drain with a colander. Serve cucumbers cold in a glass serving dish. Store leftovers in a sealed container in the refrigerator.
