The Amazing Cracker Candy
Are you one who is intimidated by the making of confections? I am. I have never been a candy maker or chocolatier but have always admired those who can and secretly dreamed of having a shop with all those delightful goodies in the window. But alas, my stage of life right now and my fears of boiling sugar have kept me from those lofty goals. However, I have discovered and heard of some simple ways to make "candy" and I'm thinking I may have to give them a try. One that has been the rage on Pinterest and online is the great Cracker Candy. Have you heard of this simple and ingenious treat?
I like a recipe that doesn't call for crazy ingredients and is minimalistic. Now don't get me wrong, tackling a complicated Julia Child is a ton of fun, but just every now and then. Having some easy and quick recipes for goodies this time of year is extremely wonderful. As you share sweets with neighbors or attend a holiday party you can whip out these delightful candies in a jiffy.
All you need are saltines, butter, brown sugar, chocolate and pecans (or any but really) and you are set to create. You could even add a sprinkle of crushed candy canes to make it even more festive. The possibilities are endless. So, if you are seeking to amaze your friends and wow your tastebuds without going crazy over a complicated dish this is the recipe to have up your sleeve!

Cracker Candy
Ingredients;
1 tube of saltines (~ 40 crackers +)
1 cup (2 sticks) butter (either salted or unsalted; do not use margarine)
1 cup + 2 Tbsp. firmly packed brown sugar
1 bag chocolate chips
1/2 to 3/4 cup toasted chopped pecans (or toasted chopped almonds)
Directions:
Preheat oven to 350 degrees Line cookie sheet with foil & spray with non-stick cooking spray. Line crackers end to end on sheet, breaking crackers to fit the end if necessary.
In a saucepan, melt butter on low heat. Once melted, add brown sugar and turn heat to medium. Continue stirring until boiling – then boil for 3 minutes (set timer). Pour over crackers, spread evenly working quickly.
Put sheet into oven – bake for 5 minutes. Remove – pour chocolate chips over top – place a sheet of foil over and let melt for ~3 minutes. Spread melted chocolate over the top evenly.
Add nuts to top – replace foil and refrigerate until set
(can be frozen)
