Chicken Philly Cheesesteaks With Fries
This recipe is a good one to use up leftover chicken. For a change, use sweet potatoes to make the fries. They are more nutritious and make a great fry.

Ingredients:
4 | large potatoes, cut into fries |
2 tablespoons | olive oil |
kosher salt,to taste | |
8 | boneless, skinless chicken thighs (1 1/2 pounds), cut into strips |
1 | onion, sliced |
1 | green bell pepper, sliced |
kosher salt and black pepper | |
4 | hoagies rolls, split |
8 slices | provolone cheese |
Directions:
1. Toss the french fries in the olive oil. Cook slowly in a frying pan on low-medium heat until browned and cooked through, about 30 minutes, turning frequently. When done, add salt tl taste.
2 Meanwhile, heat the oil in a large skillet over medium-high heat. Add the chicken, onion, and bell pepper, season with ½ teaspoon salt and ¼ teaspoon black pepper, and cook until the chicken has browned, 10 to 12 minutes. (If using pre-cooked chicken, add it in after cooking the vegetables for 7 minutes.
3 Heat broiler. Dividing evenly, fill the rolls with the chicken mixture and the provolone and place on a rimmed baking sheet. Broil until the provolone has melted, 2 to 3 minutes. Serve with the fries.
