Meatless April

My husband’s employer offers meals at work, and the month of April is entirely meatless! They are known for their good quality, locally sourced and grown ingredients, and every bite that comes out of their cafe is memorable. I always look forward to meeting him at work for lunch, but this month? Meatless?

What can I say, I like a little protein in my meal! I enjoy meatless meals every once in a while, but I am not vegetarian. I enjoy meat and for me, eating it in moderation feels healthy for my body. I wholeheartedly agree with a company offering meatless options daily, and even soley meatless meals only a day each week or so. But to withhold meat every day for a month to on campus employees feels like a lot. With that said, there are so many beautiful and tasty options for meatless meals. Let’s take a look at a few here!




The dishes are bright, colorful and creative. I love how when there is no meat, the vegetables become the star of the plate. So much flavor with cooking methods and spices, meatless meals can bring a lot to the table!

So, where do you stand? Do you think it’s reasonable for an entire company should practice Meatless March?
