Weeknight or Holiday Sweet Potatoes
Sweet Potatoes are one of my favorite things to serve on weeknight dinner and to party guests. There are always more ways to prepare sweet potatoes, and they’re always sweet! Lately, I have been dicing them, tossing in kosher salt and olive oil, and roasting in the oven. Everyone in my family loves this method, but I just wanted to shake it up a bit! So I turned to Pinterest to give me some fresh ideas. Here’s my favorite, which just has a few ingredients that are typically pantry staples. This recipe is even fancy enough for a holiday!
Ingredients:
2 pounds sweet potatoes, peeled and cut into ½” rounds
2 Tablespoons melted butter
Salt and Pepper
¼ cup maple syrup
1 Tablespoon brown sugar
½ cup chopped pecans
Here’s what to do:
First, heat the over to 500 degrees F. You need it nice and hot! Prep your baking sheet with foil.
Next, cut and season your sweet potatoes with melted butter, salt and pepper.
Then bake them for 20 minutes until the bottoms begin to brown.
Now combine maple syrup, brown sugar and chopped pecans. You could even add cinnamon and/or nutmeg at this point for a little extra flavor! Cover your sweet potatoes and flip tp make sure the sauce mixture covers everything.
Finish baking the sweet potatoes for about 10 more minutes. Don’t be afraid of some color!! I hope you enjoy these delicious and easy potatoes sometime this month!
