Kathy Left Me for a Week...so I Made a Pot Roast
Kathy went to Florida for a week for a "Sisters Reunion." This may not seem like a big deal...but for us it is!
In our 31 years of marriage, there were only a couple times that Kathy and I left home without the kids for a weekend getaway. And, each time, all Kathy could do was say things like "I wonder if the kids are OK?" and "Oh...wouldn't the kids love this?"
She worried about them so much that it took all the fun out of the trips! Ever since then, if we went on a trip somewhere, we always took the kids with us.
So, for her to leave home and go on a trip like this to Florida with her sisters was kind of a big deal. It left me home alone in this big house with nobody but myself and my 80's music!
When Sunday came around, I realized that it was up to me to cook dinner. So, with hopes of keeping Kathy's tradition of dinner excellence alive...I decided to make a pot roast.
I seared the roast on all sides to brown it so it looked good. And, I seasoned it real good with garlic salt, Lawry's seasoned salt, and Grill Mates Montreal Steak Seasoning.
I sliced up two onions and placed the slices in the bottom of the roasting pan. I set the roast on top of the onions and then showered it with sliced potatoes, carrots, and celery.
I added some mushrooms because I love them (but I left the slices large so people could pick them out if they didn't like them) and then dumped two cans of Golden Mushroom Soup, two packets of Lipton's Onion Soup Mix, and two cans of water. Finally, I seasoned it a little more and put it in the oven to cook at 350° for four hours.
