I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. Hearty Macaroni Salad

Serves: 6


  Download this recipe.

1 cup cubed cooked chicken
1 cup cubed fully cooked ham
1 cup cooked salad shrimp
6 ounces macaroni shells, cooked and drained
1 rib celery, sliced
1/4 cup diced green bell peppers
1/4 cup diced red bell peppers
2 1/2 tablespoons diced onions
1/2 teaspoon salt
5/16 teaspoon pepper
6 cups lettuce leaves, torn

DRESSING:
1/3 cup light mayo
1/3 cup sour cream, light
1 tablespoon vinegar
1/4 teaspoon sugar
1 1/4 teaspoons minced fresh dill or 1 teaspoon dill weed


In a large bowl, toss the chicken, ham, shrimp, macaroni, celery, peppers, onion, salt and pepper. In a small bowl, combine all dressing ingredients; mix well. Pour over salad and toss. Cover and chill for 3-4 hours. Serve on a "bed" of 1 cup lettuce leaves for each serving.
