20-Minute Skillet

1/2 cup marinated sun-dried tomatoes, drained and juice reserved
1 green pepper, sliced
1 pound smoked sausages, sliced into 1/4-inch thick pieces
2 cups water
1 (14 1/2-ounce) can stewed tomatoes
2 cups instant rice, uncooked
Hot pepper sauce to taste
Slice tomatoes in half; set aside. Heat one tablespoon reserved liquid in a 12" non-stick skillet over medium heat; sauté pepper for about 5 minutes. Add sausage; sauté for 5 minutes. Stir in water, stewed tomatoes and rice; bring to a boil. Reduce heat; simmer for 5 minutes. Mix in sun-dried tomatoes; simmer, covered, until most of the liquid is absorbed, about 5 minutes. Season with hot pepper sauce before serving.
