1/2 cup cider vinegar
1/3 cup sugar
2 tablespoons vegetable oil
3/4 teaspoon salt
1/4 teaspoon black pepper
1 8 1/2-ounce can lima beans drained
1 8 1/2-ounce can corn whole kernel corn, drained
1 2-ounce jar pimiento sliced, drained
1 tablespoon green onions thinly sliced
In a medium bowl, combine vinegar, sugar, oil, salt and pepper.
Add limas, corn, pimiento and green onion; toss to coat vegetables. Cover and chill for 1 hour. Serve with a slotted spoon.
