To continue Patty’s
sack lunch theme from a couple weeks ago, here are two so-fun and so-easy recipes that are perfect for packing into a
cold lunch for school or work. They’re so easy that Alice’s kids were in charge of making these:
Peanut Butter Log
1 C old fashioned peanut butter
5 Tbsp nonfat dry milk (add more as needed)
1 C raisins
2 Tbsp raw honey
Blend peanut butter and honey. Mix in as much powdered milk as you need to make the mixture easy to handle and stiff. Knead in the
raisins evenly along the dough as you form it into a 1-inch thick, 10-inch log; roll in coconut, chopped nuts, or sesame seeds.
You can also add real vanilla when mixing for a nice taste. Chill and slice. (You can also roll this out flat and cut with cookie cutters.)

Cheese Puff "Cookies"
(12-15 cookies)
1 heaping cup grated cheese (Cheddar or Swiss or great)
½ C whole wheat flour
2 Tbsp butter
Water
With fingertips, mix lightly the cheese, flour, butter, and enough water to make a stiff dough. Roll dough into small ¾ inch balls. Place on greased cookie sheet and bake at 400º until lightly browned, about 10-12 min.
¼ finely chopped bell pepper can be added for flavor, crunch, and Vitamin C. Experiment with this, and if you come up with another great flavor, send it in so we can share.
