I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. I love that and just wanted you to know how much we appreciate all your hard work in putting together this newsletter. Thank you very much.

Poor Man's Lobster

Hello,

In the Poor Man's Lobster recipe, can you substitute cod for the halibut?

Thanks!

Hi,

I'm getting mixed info. Home cook's say they use cod interchangeably in recipes calling for halibut. Professional cooks say they think the cod would fall apart. The following information about fish substitutions gives other suggestions for alternatives:

Fish Substitutions

  • If your recipe calls for Sole/Flounder you can sub turbot, plaice fluke, or all varieties of sole/flounder.

  • If the recipe calls for cod you could sub orange roughy. Arctic char can be subbed with steelhead trout, or salmon.

  • Mahi Mahi can be subbed with grouper or monkfish. If you can't get red snapper try using halibut, walleye, or all other varieties of snapper.

Me? I'd just go ahead and try it if I had cod on hand anyway dan the man, because I'm a make-do cook. ;-)

    Hope this helps,

    Desi @ DVO
