Skin or No Skin?

Quick question, do you cook sturgeon fish with or without the skin on?

Hi Don,

Remove the skin of the sturgeon prior to cooking because the oiliness of the skin imparts a strange taste to the flesh. The skin will come off easier it you poach it for a few minutes.
