Lemon Chicken Patties with Fettucini
Serves: 4

12 ounces ground chicken breasts
1/2 c bread crumbs
1/4 c evaporated skim milk
1/2 t salt
1/2 t white peppers
1/8 t ground nutmeg
1/8 t sugar
3 t lemon peel freshly grated
1/4 c parsley fresh chopped
1 spray butter flavor pam
8 ozs fettucine cooked
24 sprays I can't believe it's not butter spray (could substititute butter or margarine)
1 T parsley: fresh chopped
Mix ground chicken with bread crumbs and evaporated milk. Mix next 6 ingredients into the chicken. Divide equally into 4 patties. Let sit for 15 minutes. Spray nonstick frying pan one time with butter flavor pam. Cook patties until browned and no longer pink--about 5 minutes. Cook fettuccini according to package directions. Drain and toss with 24 sprays of I can't believe it s not butter spray and 1 T parsley. Divide the fettuccini equally among four plates and top with the patties. Serve with steamed broccoli with Lemon Sauce.
