2 cups sour cream
1/2 cup sugar
1 teaspoon vanilla extract
1 (12-ounce) package vanilla wafers
1 (28 1/2-ounce) can crushed pineapple, drained
Optional: frozen whipped topping, thawed
Combine sour cream, sugar and vanilla together; set aside. Layer vanilla wafers in the bottom of a 13" x 9" casserole dish; spread pineapple on top. Add sour cream mixture, spreading evenly; cover and refrigerate for at least 4 hours. Cut into squares to serve; add a dollop of whipped topping before serving, if desired.
