I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. I love that and just wanted you to know how much we appreciate all your hard work in putting together this newsletter. Thank you very much.

Prepare Ahead Bread?

Hello,

Question, Can I prepare dough ahead of time and bake biscuits say 3 or 4 hrs later?

Thanks!

Hi Pam,

I don't recommend it. When working with double-acting baking powder, the leavening works firstly when the liquid hits the baking powder, and then secondly when the baking powder meets the heat of the oven. Your biscuits will rise higher and be more flaky if you can maximize the double-leavening power. By waiting 3-4 hours, the "fizz" from the liquid will disappear, and the only raising power you'll get is from the heat.

I suggest mixing the fat into the dry ingredients, and then just prior to baking (3-4 hours later), add the liquid, roll the dough and bake it. I think you'll be happier with the results.

Happy Cook'n,

Desi
