Freezing Waffles
Hello,
Also, I wanted to know if you can freeze the mix for Kathy's Tender Sour Cream Waffles after you make it. It seems to make quite a lot and there's only one of me. If I reduce the recipe so I don't make as many, I end up throwing away the rest of the buttermilk because I don't use as much that way.
If the waffle mix can be frozen, then how long can I keep it in the freezer? How long can it be kept in the refrigerator before use?

Hi Karen,
I don't recommend freezing waffle batter. I think the leavening will lose its potency, and you'll end up with flat-as-pancakes waffles.
Instead, I suggest that you cook all the waffles at once; then, freeze the waffles. To reheat, remove your frozen portions from the freezer. Preheat your waffle iron, and place the waffles on the heated iron.
It only takes a minute or so to heat, crisp up, and refresh frozen waffles.
If your buttermilk spoils before you're able to use it all, go ahead and freeze that in portions needed for your recipes. The day before you need to make the batter, pull the buttermilk from the freezer to let it thaw in the refrigerator. (If you forget to thaw, you can always microwave-defrost it slowly!)
