Carrots with Marsala
Serves: 4

4 tablespoons butter
1 pound carrots
1 teaspoon sugar
1/2 teaspoon salt
1/4 cup marsala (grape juice is a good substitute)
In a medium saucepan, heat butter and sauté carrots. Add sugar and salt and mix well. Stir in marsala and simmer for a few minutes. Add enough water to barely cover carrots. Cover pan and simmer till carrots are tender. Remove lid and cook until liquids are almost completely reduced. Serve hot.
