Great Summer Sides

There is nothing better than a great side dish to go with your picnic, dinner, or whatever. Here are three recipes from the Food Network Kitchens that we have enjoyed, and want to share with you.
Herb Toasts
Serves 8
Slice a baguette in half crosswise, then cut each half lengthwise into 4 sticks. Cook 3 tablespoons minced red onion in 4 tablespoons butter until soft. Season with salt and pepper and add 1/4 cup minced mixed herbs. Brush onto the bread and sprinkle with parmesan cheese. Bake at 400 degrees until golden, 10 to 15 minutes.

Steamed Artichokes
Trim and halve 2 artichokes. Season with salt; place cut-side down in a bowl with some lemon wedges and thyme sprigs. Pour in 1/3 cup each white wine and olive oil; cover and microwave 20 minutes. Mix a bit of the cooking liquid with mayonnaise for a dipping sauce.

Curried Brown Rice
Cook 1 cup brown rice in a pot of salted boiling water for 30 minutes; drain. Melt 1/2 stick butter in the same pot. Add 1/2 cup finely broken thin spaghetti, some chopped almonds and raisins, curry powder, salt and pepper; cook 3 minutes. Stir in the rice and sliced scallions.
