I have spent the last 2 hours reading your newsletter and wonderful recipes. I have already printed a whole bunch I want to try. I love them because they are using ingredients one has on hand. Cashew Caramel Yummies

BARS
1/2 cup sugar
1/2 cup firmly packed brown sugar
2 eggs
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chopped salted cashew nuts or peanuts


TOPPING
2 tablespoons margarine or butter
1/3 cup chopped salted cashew nuts or peanuts
1/4 cup firmly packed brown sugar
1 1/2 tablespoons half-and-half


Heat oven to 350°F. Grease 9-inch square pan. In large bowl, combine sugar, 1/2 cup brown sugar and eggs; mix well. Stir in flour, baking powder, salt and 1/2 cup cashews. Pour batter into greased pan. Bake at 350°F. for 20 to 25 minutes or until light golden brown.

Meanwhile, melt margarine in small saucepan; remove from heat. Add remaining topping ingredients; mix well. Immediately spread topping over baked bars. Broil about 6 inches from heat for 1 to 2 minutes or until bubbly and golden brown. Cool completely. Cut into bars.
